chewy molasses-spice cookies

wanna hear the first naughty joke i ever heard?  it’s courtesy of my friend sheila, we were probably 10 years old:

there were 3 moles, a papa mole, a mama mole, and a baby mole. they all lived on a farm.  one moring the papa mole stuck his head out of the mole hole and said, “ooh i smell bacon.”   the mama mole wanted to smell it too, so she stuck her head out of the mole hole. “ooh, i smell eggs!”  baby mole wanted to smell this too, but there wasn’t enough room for his head too fit out of the hole. he said: “all i smell is mole-asses!!”

HA! i love that joke.  i made this receipe today for my sweet hubs, he’s been begging for mole-asses cookies for about 3 weeks.  at least.

2c flour

1 1/2 t baking soda

1 t ground cinnamon

1/2 t ground nutmeg

1/2 t salt

1 1/2 c sugar

1 1/2 sticks (12 T) unsalted butter, room temp

1 lg egg

1/4 c unsulfured molasses

preheat oven to 350. in med bowl whisk flour, soda, cinn, nutmeg and salt.  in shallow bowl, set aside 1/2 c sugar.  set aside.

beat butter and 1 c sugar til light and fluffy.  beat in egg and then molasses.  reduce speed to low, gradually add dry ingredients, beating just until dough forms.

using 1 level T per cookie, roll dough onto balls.  then roll each ball in reserved sugar to coat.

place ball on baking sheets, about 3″ apart.  bake 1 sheet at a time until edges of cookies are firm, 10-15 minutes.  cool 1 minute on cookie sheet, transfer to rack to cool completely.

notes for next time – my balls, i make them big.  little balls are ok, vanessa.  make your balls smaller.  that’s about it – quick, easy, not terribly messy and YUM.
